Soaking oats and grains overnight helps to break down those hard-to-digest components of the grains and helps to release the beneficial nutrients, making them more “bio-available” or more easily digested and absorbed. Soaking oats in apple juice makes for a delicious muesli, but add cardamom and saffron to that, and it makes it all the more sumptuous, adding a layer of richness to each bite. I’ve also added flax seeds and sunflower seeds here, but you can add any seeds or nuts you like.
150ml apple juice
less than quarter teaspoon cardamom powder
pinch saffron strands
1 tablespoon sunflower seeds
1 teaspoon flax seeds
1 apple, grated (skin peeled)
Soak the oats in apple juice with the cardamom, saffron, sunflower seeds, flax seeds and grated apple and leave overnight in the fridge. Add more sunflower seeds and flax seeds for garnishing in the morning and eat.
